  • 1 lb fresh tomatoes
  • ½ cup olive oil
  • 2 tablespoons red wine vinegar
  • 1 teaspoon salt
  • 2 garlic cloves, minced
  • 1-2 jalapeno peppers, minced
  • 6 oz. jack cheese, grated
  • 1 lb. penne or ziti
  • 1 tablespoon fresh cilantro, chopped
  • 3 tablespoons fresh parsley, chopped
  1. Chop tomatoes. Combine with oil, vinegar, salt, garlic, peppers, & cheese in large bowl to create a "sauce."
  2. Cook pasta & drain.
  3. Pour sauce into bottom of warm cooking pot. Add cilantro, parsley, and pasta. Toss. Serve.
