Menu Plan: Happy Holidays



A belated Merry Christmas and an early Happy New Year to you all!


It is just such a busy time of year, is it not? I feel like I’ve done a decent job popping in and out of Facebook and Instagram, but I’ve not been around here for a full week– yikes!


We have had a very full and wonderful week. Christmas Eve was, of course, also C’s birthday, and it was fun and joyful from start to finish. Christmas was peaceful and slow-paced and every kind of perfect– well, except for poor A. getting sidelined by a nasty headache. (We’re concerned the boy might have migraines, but neither of us has experience with them– I might pick all your brains on that another time.)


My brother and his family are now in town and that means that we got to go carol at the nursing home where my Grandma Jane lived. I asked my mom just shortly after we lost Grandma if we could still go sing– it is such a precious tradition to me and I didn’t want to stop. I also hosted C’s family party that day after having had her friend party the day before.


Like I said– busy!


But fun. Lots of fun. Precious little makes me smile as much as seeing all the cousins laugh together.


Honestly, it’s still a little busy around here, but I wanted to drop in and make sure you’re all doing well and let you know I haven’t forgotten you! I also thought I’d share the meal plan for the week. We’re scrimping and scrounging around now. We had so many major events and gatherings to bake and cook for and I made sure I had all that stuff– now that they’re over, I’m finding myself with rather empty coffers!


But here we go…



Here’s the plan:



Breakfast– Cereal, Apples, Milk (for the littles, before 7:30AM Mass)

Brunch– Ham, Eggs, & Swiss over Brown & Serve Rolls (<– my kids had never had those rolls! I found them marked down to a quarter a pack, so, you know… ;) )

D– Carnitas over Spanish Brown Rice, Cactus Salsa (<– G. ate that salsa out of the bowl with a spoon. She’s mine, alright.)



B–Wineberry & White Chocolate Oatmeal, Apples, Milk

D–Spaghetti w/ Meatballs, Green Beans




B–Dk. Chocolate Cranberry Muffins, Clementines

L–Penne w/ Cheese Sauce, Carrots

D–Ground Chicken Burgers (<– I’ll spice these up some funky way, no doubt.) 


Wednesday: — Happy New Year!

B–Eggs, Cocoa Rolls, Fruit

D–Prime Rib, etc. over at Bama & Papa’s with my sibs and their kiddos! 



B–PB Honey Oatmeal, Bananas, Milk

D–Ranch-y Cheesy Beans & Rice (date night!) <– this keeps falling on Thursdays because of the busy-ness!



B–Cantaloupe Smoothies, Toast

D–Cheese Pizza (<– that’s all I’ve got!)




B–Fried Egg Sandwiches, Oranges

L–Sandwiches, Applesauce, Pretzels

D–Hot & Sour Peanut Noodles (<– this is an awesome recipe for when there’s almost nothing left in the house)




And that’ll do it! Doesn’t look like we’ll suffer too much, despite my bare shelves. :)
