Warm Cheesy Broccoli Dip (+ wise guys)





My two older children are away from me for HOURS each day. And sometimes that bums me out. I mean, I love their school and I’m happy they’re learning and blah blah blah, but sometimes? I just miss them.



The best thing to do on those sappy-mama days, I’ve found, is just to channel that sad energy into making them a tasty snack to welcome them home.


We had a couple of chilly Fall-ish days blow through last week and, to me, that made it perfect weather for a nice warm dip. Ooey, gooey, cheesy yumminess hits the spot when the mercury drops!



This recipe is so easy-peasy, it’s sort of crazy. Still, it’s tasty and even manages to work some veg in. Nice, right?


Warm Cheesy Broccoli Dip


  • 1 can Campbell’s cream of mushroom soup
  • 6 oz. shredded cheddar (or cheddar/jack blend)
  • 1 package frozen broccoli florets


Dump all ingredients into slow cooker*. Turn on low for a couple of hours, until warm and melty. Serve with pita chips, toasted hunks of bread, crackers, or pretzels… whatever floats your boat!


*Note: I made this in a slow cooker, because it was simple and I could just forget about it. You can also very easily do this in the microwave. Just dump it all in a bowl and heat until warm and melty.

Now… I would be remiss in not pointing out that, while making the dip went without a hitch, toasting the chunks of artisan French bread for with it proved slightly more problematic for me.

“Way to multi-task, Mom! You made us a tasty snack AND tested the smoke detector!”
