Shopping List for 5 Summer Meals from 5 Chicken Breasts

   

 

Are you ready to make five distinctive, delicious recipes that help you stretch your meat without feeling deprived? Fabulous! Well, let’s get shopping, then, okay?

 

In addition to the five bone-in chicken breasts, here are the other ingredients you’ll need to have on hand in order to make all the recipes included in this series:

 

Dairy:

  • 16 oz. sharp or extra sharp cheddar
  • 4 oz. mozzarella
  • 8 oz. colby jack
  • 1/2 cup buttermilk
  • 1 egg

 

Produce:

  • 2 tart apples
  • 1 head romaine lettuce
  • 1 ┬ábag spinach
  • 2 plum/Roma tomatoes
  • 2 red peppers
  • 1 green pepper
  • 1 large onion

 

From the aisles:

  • 1/2 cup mayonnaise
  • Italian salad dressing or vinaigrette
  • 2 tablespoons tomato paste (or ketchup)
  • 1 cup taco or enchilada sauce
  • 8-10 flour tortillas (soft taco or burrito size will work fine)
  • 3 cups rice (brown or white– your preference)
  • 1 cup pineapple juice

 

Pantry staples (baking/spice aisle):

  • approx. 4 1/2 cups flour
  • 1/4 cup corn starch
  • 1 tablespoon baking powder
  • approx. 1/2 cup white sugar
  • 1/4 cup white vinegar
  • 1/4 cup (or so) olive oil
  • oil for frying (whatever kind you prefer for pan-frying breaded chicken)
  • salt
  • black pepper
  • parsley
  • onion powder
  • garlic powder
  • basil
  • cayenne
