Menu Plan: The heat is on!


There is no doubt– Summer is HERE!


And, while I can’t claim to love having a “feels like 96″ temp at 10 PM or walking through thick humidity at 6 AM, I won’t fuss overly much. Through it all, we are blessed to have shelter, food, and hydration.


I drive by, AC blasting in my minivan, and see Father Larry outside watering the sunflowers, dressed in his long, dark brown Franciscan robes, total peace on his face… Heat index? 104. I’m trying to take a page out of his book. (I’m not there yet; I’m trying.)


Speaking of Father Larry, we were proud and delighted to see A. serve by his side at the altar last Sunday. “It’s my dream come true!” A. announced.


I’m trying not to bake a ton in this heat, so we’ve relied heavily on no-bake desserts like popsicles or even a handful of chocolate chips… hey, whatever works, right? 


Here’s the plan for this week:




Breakfast (for the littles before 7:30am Mass)–Cheerios, Yogurt, Clementines

Brunch–Biscuits and Gravy (I HATE sausage gravy. Hate it. So I’ll likely have biscuits with jam or something.)

D–Sunday Supper at Bama & Papa’s– and my brother and his family are in town from Illinois. Woo hoo!


B–PB&J Oatmeal, Mixed Berries, Milk

D–Slow Cooker Ranch-y Pork over Rice, Carrots & Green Beans (from the garden)



B–English Muffins, Melon, Milk

D–Hot Dogs & Corn (on the grill)




B–English Muffins, Clementines, Milk

D–Spaghetti, Italian Cheese Bread (if I can bear baking by then!), Broccoli




B–Brown Sugar Craisin Oatmeal, Milk

D–Pasta Salad (date night!)



B–Banana Cantaloupe Smoothie, Toast

D–Pepperoni Pizza



B–Sausage & Peppers Skillet Scramble

L–Sandwiches, Pretzels, Fruit

D–Beef Enchiladas, Salad



And that, I believe, should do it! What are you most looking forward to eating this week?
