Menu Plan: Summer… break??


I promise you all I have been planning and cooking!


It’s been chaotic around here with the loss of my grandma, swimming lessons, horseback riding, and all the other standard activities. I haven’t really found my groove doing summer camps as yet, and I’m really hoping to change that this coming week. Swimming is done, and that will simplify things– that was a four day a week commitment!


I’ve been menu-planning all along, but failed to share them for the past few weeks. I’m trying to rectify that, too!



Here’s the plan for this week:




Breakfast (for the littles before 7:30am Mass)–Cheerios, Yogurt

Brunch–Ham, Mushroom, & Cheese Burritos; Blueberries

D–not positive… probably something pretty simple, since we have a busy day planned!



B–S’mores Oatmeal, Mixed Berries, Milk

D–Slow Cooker Sesame Chicken over rice (I more than double the soy sauce in this recipe, but it’s delicious!)



B–Blueberry Baked Oatmeal, Apples, Milk

D–Slow Cooker Pasta & Meat Sauce, Peas




B–Blueberry Baked Oatmeal, Clementines, Milk

D–Patty Melts, Corn (date night)




B–Banana Oatmeal w/ Dandelion Honey, Milk

D–Shrimp & Spinach Stuffed Ravioli w/ Vodka Sauce (I make my own ravioli. The picture below is not this particular variety, but it’ll give you an idea.)



B–Black Raspberry Orange Slush, Toast

D–Garlic, Shrimp, & Onion Pizza



B–Hard-Boiled Eggs, Hashbrowns, Berries

L–Sandwiches, Pretzels, Fruit

D–Turkey & Bean Burritos, Salad



And that, I believe, should do it! Our weather has finally settled into more typical Connecticut temps… it was brutally humid there for awhile. Yuck! How’s the weather where you’re at?
