(Make-Ahead) Watermelon Lime Slush

 

I love blender drinks. And my kids love them, too! What I’m not in love with is getting that appliance dirty over and over again. For this reason, I love making batches of smoothies all in a row and tossing them in the freezer. The night before we’re going to enjoy them, I simply move them to the fridge and they’re good to go! And I only have to wash the blender once. Win-win.

 

This same method works beautifully for this bright, summery slush. The ingredients are simple and refreshing and it takes only minutes to whip several batches together.

 

Ingredients:

  • cubed fresh watermelon, enough to fill your blender (typically 4-6 cups)
  • juice of one lime (I squeeze it right over the blender, since limes aren’t usually too seedy)
  • 1-2 teaspoons of sugar (optional– my kids happily drink it without, but some prefer it a little sweeter)

 

Directions:

Blend all ingredients until very smooth. You may need to add just a splash of water to get it going, but it shouldn’t take much. Pour into 2- or 3-cup storage containers and freeze. Remove to the refrigerator the night before consumption and mixture should be a perfect slush texture after a quick stir.
