Fast Food

 

Everyone knows that “Summer Break” is a bit of a misnomer, right? At least around here, it sometimes seems that way. Yesterday’s activity schedule was brutal and, while it will not be the norm, it kept me running from sun-up to nearly sun-down. Moms’ Ministry, a gymnastics meet, swimming lessons at the lake for all, horseback riding lessons and all the travel and clean-up in-between.

 

And did I mention it was 92 and humid? Yeah, so there was that…

 

Anyway, I am a very dedicated menu planner, so it’s rare to find me without any idea what we’ll be eating. And, in reality, I had a plan for last night. I just didn’t feel like doing it. Even though it didn’t require a whole lot of stove time, the thought of turning on a burner for any length of time was appalling to me.

 

Sometimes even the best plans are meant to be changed.

 

So we had fast food.

Thin-sliced ham, “real” American cheese (which is still processed, but not “cheese product”), swiss cheese, olives, pickles, crackers, and fruit.

 

Fancy? No. Super healthy? Not at all.

 

But it was fast. Easy. Cool. Satisfying.

 

Sometimes? Fast food just hits the spot.
