Menu Plan: Spring Fever!


It’s busy, busy Spring!


Spring Break was lovely, but now it’s done. This week marks opening day for baseball; our first game happens to fall on the same day as my last church school class for the year, so I’ll be running like a wild woman. C. also starts back at horseback riding this week– she is so excited!


Careful menu planning becomes extra important when activities abound– here’s what we’ll be eating this week:



Breakfast (for the littles before 7:30am Mass)–Cheerios, Applesauce, Milk

BrunchCinnamon Rolls, Oranges, Cheddar Cheese Slices

Snack–Yogurt and popcorn

D–Sunday Supper at Bama & Papa’s (I hear shrimp is on the menu!)



B–Brown Sugar & Raisin Oatmeal, Milk


D–Spaghetti with Meatballs, Green Beans



B–Lemon Muffins, Yogurt

D–Chicken & Rice Burritos (these are already made and in my freezer)




B–Lemon Muffins, Apples, Milk

D–Grilled Cheese, Tomato Soup (date night for us)



B–Cranberry Dark Chocolate Oatmeal, Clementines, Milk

D–Shrimp & Monterey Jack Quesadillas, Corn



B–Banana Pineapple Smoothie, Toast

D–4 Cheese Pizza 



B–Eggs, Hashbrowns, Mixed Fruit




And that’ll do it!

    I most excited about trying black bean burgers tonight. My husband is even excited about trying these after tasting a bite of a friend’s this weekend. Protein without the fat of other meats! Plus our girls LOVE rice and black beans, so I know they’ll gobble them up.
