Menu Plan: A Day Behind!

I’m a day behind, my friends!

I’d apologize for that, but, really, it’s the result of having my husband home for a long weekend and celebrating the beautiful Easter holiday with my family. So… I’m not all THAT sorry. ;)

Anyway, I’m ready to get back to things, and part of that means eating yummy food. Here’s what we’re eating for this week:

Sunday:

Breakfast (for the littles before –HAVING TO GET THERE INSANELY EARLY FOR THE –7:30am Mass)–Organic Cheerio-type cereal, Yogurt

Brunch–Hard-Boiled Eggs, Cinnamon Rolls, Pineapple

Snack–Candy and Junk. (Not for me, though– I don’t like candy all that much. I raided swiss cheese in the fridge. Shhh… ;))

D–Easter Supper at Bama & Papa’s: Grilled New York Strip Roast that my dad did (YUM!), oven roasted potato fans, carrots, asparagus, salad, fruit, spiced carrot bread (that I took), chocolate fudge cake w/ fresh whipped cream & strawberries, sour cream cookies… um, there might have been more. We ate a LOT.

Monday:

B–Brown Sugar & Raisin Oatmeal, Coconut Milk

D–Roast Chicken sandwiches on fresh-baked sourdough w/ dijon, carrots

Tuesday:

B–English Muffins, HB Eggs, Pineapple

D–Chicken Ravioli Soup, Breadsticks, Peas

Wednesday:

B–English Muffins w/ PB, Pineapple, Milk

D–Cheesy Beans & Rice w/ ranch dressing (date night for us!)

Thursday:

B–Cranberry Dark Chocolate Oatmeal, Apples, Milk

D–Tacos, Salad

Friday:

B–Acai Vanilla Smoothie, Toast

D–Ham & Sausage Pizza (my non-Catholic husband was more than ready to have some meat on his pizza again ;) )

Saturday:

B–Ham, Egg, & Cheese Sandwiches on Onion Bagels, Fruit

D–Steak, Brown Rice & Veggie Pilaf

And that’ll do it!

What are you most looking forward to eating this week?

I love their Easter outfits! While I hardly ever dress up for church, Easter is the one Sunday that I like to dress the whole family up. My girls looked so cute in their little dresses with white cardigans, white tights and white dress shoes. I wore a dress too but it was so cold/rainy here that I had to change right after church before going out to lunch. Easter in late April is much better for Easter dresses!

    • Yes indeed, Michelle! Or further south. Easter dresses could be pretty flimsy and still suffice when we lived in VA or FL. New England? In March? Brrrr!!! (I love those sweet little white cardigans, though– so cute!)

You have cute bunch of kiddos, they look good in their Easter outfits :) Is your statement about not liking candy some kind of April Fool’s joke? ;) Sadly, I cannot say the same thing! Have a good week!

    • Thanks– I love those dresses my mom made! The girls were thrilled with their favorite colors. :) Oh, I don’t HATE candy or anything, but it doesn’t tempt me much. Cheese, on the other hand? I could gnaw it straight off the block… *blush*
