Menu Plan: Simple, Down-home Comfort

 

February is not my favorite month.

 

Though I do indeed adore Valentine’s Day, I also start desperately craving Spring once this month arrives. The fact that I live in New England makes this a fairly hopeless dream, but, alas, visions of gardening and hiking dance in my head!

 

It’s been busy and cold and snowy around here. So… what to do? I say turn to some simple, down-home comfort food and call it a day.

 

Sunday:

Breakfast (for the littles before 7:30am Mass)–Rice Krispies, Yogurt

 

Brunch–French Toast, Ham, Mixed Fruit

D–Beef & Noodles, Carrots

 

Monday (President’s Day– everyone’s home):

B–Egg Quesadillas, Oranges

D–Tomato Tortellini Soup, Cheese Bread

 

Tuesday:  

B–Mixed Berry Oatmeal, Milk

D–BBQ Hot Dogs, Garlic Toast, Peas

 

Wednesday:

B–Pumpkin Muffins, Apples, Milk

D–Ham & Bean Soup, Grilled Cheese

 

Thursday: 

B–Tea & Crumpets Oatmeal, Milk

D–Beef & Bean Burritos, Spanish Rice

 

Friday:

B–Melon Cucumber Smoothies, Toast

D–Cheese Pizza*

 

Saturday:

B–Scrambled Eggs, English Muffins w/ PB, OJ

D–Homemade Chicken Nuggets, Corn, Biscuits

 

(Somehow I have no photos of any of these things, really. Well, except the oatmeal. Sorry!)

 

*All Friday pizzas for the next six weeks will be meatless in keeping with our Catholic tradition of meatless Fridays during Lent.
