So, we’re still going strong on the whole “eating from the freezer” routine this month. It’s been a huge blessing to me on some of these busy days and I’ve already announced that I plan to do something similar next month since Decembers are beyond wild around here. My husband is A-OK with that plan but has requested that I roll a few of my own recipes back into the rotations. Since that’s kind of flattering, I’m willing to oblige.
As I looked over all of our favorite meals and recipes, one thing struck me over and over again: we sure do love cheese! Our family easily goes through twelve or more pounds of cheese every month. Really! I’ve often said I could give up meat before cheese– it’s the total truth.
The week’s plan involves BOTH meat and cheese, but just take a look at how frequently cheese makes an appearance– I marked meals with cheese with an asterisk:
Sunday:
B- Cheerios, Applesauce, Milk (for the littles before 7:30am Mass)
L- Buttered French Toast Casserole, Apples with Cheddar*
D- Spicy Taco Lasagna*
Monday:
B- Oatmeal, Milk
D- Frozen Burritos*
Tuesday:
B- Oatmeal Cranberry Muffins, Apples w/ Cheddar*
D- Southwest Pork Chops* (<– this might not sound cheesy, but I plan to shred it and serve it with rice and cheese)
Wednesday:
B- Oatmeal Cranberry Muffins, Yogurt
D- Spaghetti w/ Meatballs, Green Beans w/ grated parm*
Thursday:
B- Oatmeal, Milk
D- Leftovers* (you can bet they’ll be cheesy!)
Friday:
B- Smoothies, Grilled Cheese*(<– I’m well aware that sounds crazy. My kids think it’s the bee’s knees and, really, what’s so odd about toast and cheese for breakfast???)
D- Pizza*
Saturday:
B- Bacon, Egg, & Cheese Sandwiches*, Fruit
D- Macaroni & Cheese*, Broccoli

How would you rate yourself on the cheese lover scale? With 1 being “never touch the stuff” and 10 being “give me cheese or give me death”, where do you fall?
I’m a certified 11.

I’m at least a 10 (if not higher.) I could eat cheese for breakfast, lunch, dinner as well as snacks. We we have a busy day and don’t get home until 7PM, we typically will have grilled cheese, quesadillas or mac n’cheese for dinner.

Cheese is way more necessary than meat.
