Menu Plan: 11/18 — Thanksgiving week!

It may seem that I’ve been lax in my menu planning and following but I haven’t, really. I told you all a few weeks ago now about my big freezer cooking session following Jessica’s plan. All that preparation has made my life rather simple so far. But, as you may have suspected, changes in plans, impromptu family outings to Chilis, and anniversary dinners have shifted things around just a bit here and there…

 

Here’s what we’ll be eating this week!

 

Sunday:

B- Cheerios, Applesauce, Milk (<– for the littles, before 7:30am Mass)

L- Eggs Florentine Casserole, Double Chocolate Muffins

D- Salsa-Ranch Soft Tacos

 

Monday:

B- Oatmeal w/ brown sugar and raisins, Milk

D- Tortellini Marinara w/ Meatballs

 

Tuesday:

B- Lemon Blueberry Scones, Yogurt

D- Burritos

 

Wednesday:

B- Lemon Blueberry Scones, Apple Slices

D- Salmon & Broccoli Rice (for kids! Date night for us.)

 

Thursday: (THANKSGIVING)

B- Cinnamon Rolls, Scr. Eggs w/ Cheese, Clementines

D- Thanksgiving feast! I’ll be making the rolls– that’s always my job. :)

 

Friday:

B- Leftover Cinnamon Rolls, Fruit

D- Pizza and a movie night

 

Saturday:

B- Ham & Swiss Clafouti

L- Mac & Cheese, Jello

D- Lasagna

 

And that’ll do it! We really do eat lunch during the week, but we’ve been relying heavily on leftovers for that all month long. We’ve also had to fill lunches with lots of pretzels, bananas, and coconut water for our son to try to beef up his salts and electrolytes– we’re still having ongoing issues with his heart and his remarkably low BP isn’t helping matters.

    I’m bringing rolls, pumpkin pies and mulled cider to my in laws for Thanksgiving. We love our yeast roll recipe, but I usually make them once a week all year round (it’s our “bread”) I’m seriously tempted to try yours this year for something different. My son watched your vlog with me & wants to try them. I’m just a little nervous about bringing something new to my mother-in-law’s Thanksgiving dinner!!!

    • The rolls are really easy, Sonja. I hated making rolls until I found that recipe, if that tells you anything. ;) They’re slightly sweet and have a golden color to them– I love them for Thanksgiving and Easter because they work well for making sandwiches with the meat, too. All that said… if you have a tried and true recipe, I don’t blame you for not wanting to veer from it! :)
