Ranch-y Chicken & Veggie Pizza

I don’t often share two recipes in one week on this here blog. And, it is true, I already told you all about the amazing Chubby Hubby No-Bake Cookies that we’ve been enjoying.

 

But it’s Friday. And what do so many of us enjoy on Friday? … Pizza!

 

I’m probably going to turn a lot of you off IMMEDIATELY when you see that I put carrots* on this pizza. I know– that’s weird. But, if you have a moment, just hear me out.

 

This pizza is an all-around kid pleaser that packs in far more nutrition than, say, a pepperoni or plain cheese pizza. Familiar flavors come together in the easy-to-eat medium of pizza and that makes it a winner!

 

Carrots and broccoli are both in season (at least in our neck of the woods) and that makes them both tasty and affordable. Kids love both with ranch dressing, so I’m running with that concept.

 

Here goes!

Ranch-y Chicken & Veggie Pizza

 

  • 1 pound (about a grapefruit size chunk) of your favorite pizza dough
  • 1/2 cup cottage cheese
  • 1/4 cup ranch dressing
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon garlic powder
  • 1 large or 2 medium carrot(s), lightly cooked (I boiled mine for about five minutes) and chopped
  • 1 small head of broccoli, florets removed and lightly cooked or steamed (I steamed mine for three minutes)
  • 1 boneless/skinless chicken breast, cooked and chopped (How you cook this doesn’t really matter– I did it in a fry pan, but grilled or baked would work just fine.)
  • 2 cups shredded mozzarella cheese

 

Directions:

  1. Pat dough into a thin crust on a greased or cornmeal-dusted pizza pan.
  2. Combine cottage cheese, ranch dressing, black pepper, and garlic in small bowl. Spread over dough– this will act as your “sauce.”
  3. Scatter chicken, broccoli florets, and diced carrots over the “sauce.”
  4. Sprinkle mozzarella cheese over the top of the chicken and veggies.
  5. Bake at 450 for 10-12 minutes, until golden and bubbly.

 

*Half of the pizza has diced carrots. The other half has diced tomatoes. My youngest and I LOVE tomatoes on our pizza, so we’ll eat from that side. The remaining peeps don’t care for tomatoes on pizza and will happily much those vitamin-A rich carrots. :)
