Menu Plan: 9/16 — Make-Ahead Meals

 

This week marks the beginning of Autumn and it is also a super busy week for ME. Dental appointments, doctors’ results, oodles of activities, and the start of my gig as a catechist all begin this week. No need to panic, though!

 

I’ve come up with a yummy menu plan chock-full of meals that both make use of the bounty of our CSA and allow me to do tons of prep ahead of time. Only ONE of these meals (that would be Friday’s) is not already made, at least in part, at the time of this writing. So… hurray for that!

 

Here’s what we’ll be eating around here…

 

Sunday

B: Cheerios, Yogurt (for the kiddos, before 7:30am mass)

Brunch: Butternut Squash Pancakes w/ Pumpkin Pie Spice, Ham, Bananas

Snack: Leftover scavenge for the girls– the boys are at a bday party.

D:┬áSunday Supper at Bama & Papa’s

 

Monday

B: Apple Cheddar Oatmeal, Milk

L: Leftovers

D: Cheese Tortellini topped with Rose Romano’s Peppers in marinara (<– I won these during a Twitter party), Green Beans

 

Tuesday

 

B: Creamsicle Oatmeal, Clementines, Milk

L: Macaroni w/ diced eggplant, Peas, Crackers

D: Eggplant Parm, Green Beans (The eggplant parm is already in the freezer and the beans will be leftover from Monday– hubby & I will have late-night date-night take-out after my psycho-busy day. :))

 

Wednesday

B: Zucchini Bread, Bananas, Milk

L: Egg Salad Wraps, Cheese, Pretzels

D: Roasted Veggie Soup, Italian Cheese Bread

 

Thursday

B: Zucchini Bread, HB Egg, Juice

L: P, B, & J, Cheese, Pretzels

D: Chicken & Veggie Stir-Fry w/ Brown Rice (I have red peppers, carrots, yellow peppers, broccoli, and red onion all prepped for this– it’s like a rainbow in a bag!!)

 

Friday

B: Cantaloupe Cucumber Smoothies, Toast

L: Cheesy Beans & Rice

D: Buffalo Chicken Pizza

 

Saturday

 

B: Egg English Muffin Sandwiches

 

L:Macaroni & Cheese, Jello, Carrots

D:Chicken & Broccoli Lasagna Casserole with Asiago Cream Sauce

 

Oh… and just in case you were wondering? Last week’s Jambalaya, while pretty, was a FAIL. It was so, so, SO hot that my family (who enjoy spicy things!) were near-to crying. I, of course, ate it without complaint, even as my lips got puffy. ;) ┬áHave you had any oops moments in the kitchen lately?
