Chubby Hubby No-Bake Cookies

Have you ever tried Ben & Jerry’s Chubby Hubby ice cream? It is my very favorite flavor of theirs. Hands down. They describe it like this:

Chubby Hubby consists of vanilla malt ice cream swirled with fudge and peanut butter, and containing pretzel nuggets covered in fudge and filled with peanut butter.

There is not one thing I can find wrong in there. Nada.

The flavors are so fantastic, I thought… why not bring them together in a quick, tasty cookie?

One of my better ideas.

Here you go!

Chubby Hubby No-Bake Cookies

  • 1/2 cup butter
  • 1/2 cup milk
  • 2 tablespoons malt powder (if you have it– they’re still good without it, so don’t fret)
  • 1 3/4 cups sugar
  • 1/4 cup, heaping, cocoa powder
  • 1 teaspoon vanilla extract
  • 1/2 cup, heaping again, peanut butter
  • 3 cups oats (quick or old fashioned)
  • 1 cup pretzel bits (I toss a few handfuls in a ziploc bag and pound them to little bits, personally.)

Add butter, milk, sugar, and cocoa to pan. Heat over med-high heat until butter is melted and mixture starts to boil. Boil for one minute, stirring pretty much all the time. Remove from heat. Add in vanilla, PB, oats, and pretzel bits. Spoon on to waxed paper- or parchment paper-lined cookie sheets. Toss in the fridge until set.
