Apple Crumble Oatmeal

It’s happening all over the nation… day-by-day, more and more schools are starting back up. Some started on the first of August and totally blew my mind! We still have a couple weeks of summer break ahead of us, but I’ll be packing up backpacks before I can blink.

 

Need a quick and easy, but hearty and wholesome breakfast to send them on their way? This one will do it! Because it calls for quick oats, it comes together in a flash. Realistically, an older grade schooler could do the whole thing, start to finish, with no problems.

 

Apple Crumble Oatmeal (serves 2 – 4, depending on age and appetite)

  • 2 cups quick oats
  • 1 teaspoon cinnamon
  • 1/2 cup 100% apple juice
  • 1/2 teaspoon vanilla
  • 1 large (or 2 small) apples, finely diced
  • 1 tablespoon brown sugar

 

Pour apple juice into a microwave-safe mug and heat for 2 minutes on high. (Alternatively, you could heat this in a sauce pan on the stove until simmering.)

 

Meanwhile, dump quick oats, cinnamon, and diced apple into large bowl and stir until well-mixed.

 

When apple juice is heated, stir the vanilla into it. Pour the hot liquid over the oat/apple mixture and stir until crumbly clusters form.

 

Dish up into small bowls. Top each with a sprinkle of brown sugar, if desired (I skipped it this time in the photo above).
