Breakfast pizza is an easy, tasty, fun-to-eat way to start the day. I love the flexibility of this recipe and how it offers a yummy way to use up small amounts of leftover meats and veggies.
I’m including the recipe for the pizza pictured above but, truly, use what you have! Ham or bacon both make tasty substitutes for the sausage. Onions, olives, jalapenos, tomatoes, etc. would be tasty additions or substitutions for veggies. Salsa or even ranch could take the place of the taco sauce. Don’t ever feel pigeon-holed by a recipe… be creative!
Breakfast Pizza
Ingredients:
- 1 pound pizza dough (about the size of a grapefruit)~~ will yield 16″ crust– I used this recipe.
- 1/3 cup taco sauce (I use Lynn’s recipe.)
- 1/2 cup mozzarella or jack cheese
- 1 cup cheddar cheese
- 1/2 cup sliced mushrooms
- 1/2 cup sausage, cut into chunks
- 1/3 cup chopped red peppers
- 4 eggs, scrambled
- several sprigs of cilantro, chopped
Directions:
Preheat oven to 400*. Press dough onto greased or cornmeal-dusted pizza pan. Spread with sauce. Sprinkle half cup of mozzarella or jack cheese over the surface. Top with sausage and veggies. Scatter scrambled eggs over that. Sprinkle cheddar cheese all over the toppings. Finish with a scattering of fresh cilantro or other fresh herb (such as parsley). Bake for 12-14 minutes.
*I tend to bake pizzas at a hotter temperature, but, because eggs are a little delicate, I don’t like to bake them any higher than 400.
