Well, goodness, it’s been over a month, I think, since you’ve seen a menu plan from me! Finding out I was expecting threw the first wrinkle in my planning, and then going through our loss further messed things up for us. I have been planning, but not as carefully nor as far in advance as is typical.
You’ll notice this plan does not include weekday lunches, though my plans usually do. The meals from my freezer tend to be pretty abundant, so we’ll often end up with leftovers to use up in lunches. I’m flying kind of fast and loose on those these weeks…
Sunday–
B: Chocolate Granola, Apple Slices, Milk
L: Baked Cinnamon Oatmeal Cups, Plum Smoothies
D: Chicken Queso Quesadillas
Monday–
B: Maple Raisin Oatmeal, Milk
D: Linguine Marsala (w/ Salmon for the kids)
Tuesday–
B: Lazier, Healthier Apple Muffins, Tangerines, Milk
D: Taco Casserole
Wednesday–
B: Lazier, Healthier Apple Muffins, Cheese, Fruit Salad
D: Hash Brown Casserole (from the freezer– this is like Tater Tot Casserole, but with homemade hash browns on top)
Thursday–
B: PB Raisin Toast, Milk
D: Homemade Chicken Soup w/ extra veggies, Crackers
Friday–
B: Strawberry Oat Smoothies, Toast
D: Salsa & Cheese Pizza w/ white beans and jalapenos
Saturday– (St. Paddy’s Day! I’m not Irish, but my husband — and, thus, my children– are!)
B: Green Pancakes (I plan to do this with creme de menthe, mini dark chocolate chips, and whipped cream.), Eggs, Kiwi, Green Grapes
L: Spinach Pizza, Shamrock Shakes
D: Some kind of soup, Irish Soda Bread w/ Dubliner Cheese (Corned Beef and Cabbage is just TOO salty for my tastes. At least the only times I’ve tried it…)
And that should do it! I’ve been unendingly grateful for my well-stocked freezer over these past few difficult weeks. It’s been a huge blessing to just take a bag down with me and “shop from the freezer.” It also enabled my husband to seamlessly continue the plan even when I was recovering. So… yay for freezer cooking!

My mom brought a pan of those over when I was in the hospital. My husband asked, “Do you like these?” I answered, “Sure hope so– that’s my recipe!”
[...] Last week’s Green Saturday plan was a lot of fun! I’m not particularly a fan of corned beef (and, quite frankly, I find it WAY too expensive, even on sale, for what it is), so we found other ways to celebrate the Irish among us. [...]
