I made a TON of homemade peppermint patties over the holidays. So many, in fact, that we grew sick of eating them. I know, right? The horror! But, alas, it’s true. And I get weary of things sitting around. I decided that I could surely do something with the leftovers and, voila, these cookies were born. A simple drop cookie, they’re made special by the addition of chopped peppermint patty.
- 1/2 cup butter
- 1 cup white sugar
- 1 egg
- 1/2 teaspoon baking soda
- 1/2 teaspoon salt
- 1 teaspoon vanilla (peppermint extract could be subbed here, but I didn’t want these to be overpowering in their mintiness)
- 1/4 cup cocoa powder
- 1 cup flour (plus a couple tablespoons if the dough seems too sticky to you)
- 15 chopped peppermint patties (I used homemade, because I had them on hand. York would work just fine, though.)
Cream butter and sugar. Beat in egg. Add baking soda, salt, and vanilla. Mix in cocoa. Gradually add flour. Fold in chopped candies. Drop rounded teaspoons-full (the kind you eat with, not measure with) onto ungreased cookie sheets. (A cookie scoop works beautifully, if you have one.) Bake at 350 degrees for approx. 10 minutes, rotating racks midway through baking time.
