Peanut Butter Butterscotch Chip Cookies

It felt funny typing that name!  It’s the “butters” right in a row.  I kept thinking that I ought to be able to come up with something more clever… Peanut Butter Squared Scotch?  Nah, too confusing.  Peanut-Butter-Scotch Cookies?  Better not… people might think there’s actual scotch in there!  So, alas, awkward as it may be…


Peanut Butter Butterscotch Chip Cookies

  • 1/4 cup butter
  • 1/4 cup cooking oil (such as canola or melted coconut)
  • 1/2 cup brown sugar
  • 1/4 cup white sugar
  • 1 egg
  • 1/2 teaspoon salt
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon vanilla
  • 1/3 cup peanut butter (or there-abouts– I really just take a spatula and scoop a big blob out)
  • 1 1/2 cups flour
  • 1/2 cup butterscotch chips


Preheat oven to 350.  Beat butter, oil, and sugars together.  Add in egg.  Measure in salt, soda, and vanilla and mix well.  Drop in peanut butter and about half of the flour.  Mix until smooth.  Gradually add remaining flour.  Finally, add butterscotch chips and mix just until incorporated.


Drop rounded teaspoonsful (the table kind, not the measuring kind) onto ungreased cookie sheets and bake for 8-10 minutes.
