Chocolate Butterscotch Zucchini Muffins

Sometimes?  I’m just weird.  Happily, that weirdness (and a willingness to experiment and play in the kitchen) frequently pays off.  Such was the occasion this morning.


I had zucchini bread on the menu plan for this morning.  An impromptu zoo trip and subsequent home repairs that involved climbing around the roof meant I did not get it done yesterday.  Not a huge deal but, as you may know, zucchini bread (or banana bread, etc.) can take about an hour to bake– that’s a lot of time when you’re talking about trying to squeeze this in between the morning walk and getting kids off to school.


I plan on making Amy’s Pumpkin Butterscotch Muffins in the next week or two.  Muffins bake up much more quickly than bread!  However, I do not yet have my pumpkin for that recipe.  Hmm.


I ended up morphing inspiration from that recipe with this one for Chocolate Zucchini Bread.  The end result met with rave reviews from all three kids and was done in plenty of time of time for them to enjoy a leisurely breakfast before heading out the door.  Sounds like a winner!


Chocolate Butterscotch Zucchini Muffins


  • 3 cups flour (I used 2 cups unbleached all-purpose and 1 cup whole wheat.)
  • 1/2 cup cocoa
  • 1 tsp. baking soda
  • 1 tsp. salt
  • 1/2 tsp. baking powder
  • 1 1/3 cups sugar
  • 3 eggs
  • 1/2 cup canola or coconut oil (if using coconut, make sure it’s melted/liquidy)
  • 1/2 cup melted butter
  • 2 tsp. vanilla
  • 2 cups shredded zucchini
  • 1/2 cup butterscotch chips


Preheat oven to 350.


Combine dry ingredients in large bowl (except for the sugar).  In separate, medium bowl, mix eggs and sugar together.  And oil and butter, then vanilla.  Stir together.  Do not be surprised when the oil objects to being well-incorporated. ;)  Fold in zucchini.  Dump this wet mixture into the dry ingredients and stir together gently.  It will be fairly stiff.  Fold in butterscotch chip.


Spoon into greased muffin tins and bake for 20-22 minutes.
