The Miga Wrap


This is NOT health food.  Let’s just establish that right off the bat.  Nonetheless, it does contain eggs (for quality protein) and salsa (which will give you at least a little fruit and veggie), so let’s just say it could certainly be worse. ;)


We love Migas around here.  They make a regular appearance in the breakfast rotation but, well, they’re definitely not portable.  What to do?  No problem:



  • 1 cup crushed tortilla chips (plain tortilla, Fritos, Doritos… whatever you’ve got will do here)
  • 8 eggs
  • splash of milk
  • butter, for cooking
  • 3/4 cup shredded cheese (I recommend cheddar or jack.)
  • 6 flour tortillas
  • 1/2 cup (or so) salsa

Directions:  Melt butter in medium-large skillet over medium heat.  Dump crushed chips into pan.  Beat together eggs and milk and pour over chips.  You can cook this all as one big “patty”, almost like an omelet, or just scramble it all together.  It’s going to taste the same, so just do what works.  Once your eggs are all set, sprinkle cheese all over the surface, remove from heat, and cover with lid or foil until cheese is totally melted.  Portion eggs evenly over warmed tortillas, top with a couple good spoons of salsa, and roll up burrito-style.   Serves 4.  (Or 5, if you’ve got some littles like we do.)


Voila.  Portable Migas.
