Menu Plan: 7/10 – Grow, Zucchini, Grow!


We really did eat last week- promise!  But since my husband had Monday off and took Tuesday off, we had such a nice, long, lovely weekend together that, well, my menu plan never made it up.  My apologies!  Here’s what’s happening this week, though:



B-Cereal, Applesauce, Milk (for the kids, before 7:30 Mass.  That’s right.  Seven.  Thirty.)
L-Breakfast Burritos, wild black raspberries
D-Sunday Supper at Bama & Papa’s


B-Apple Cinnamon Chip Oatmeal  (Think along the lines of my Strawberry White Chocolate Oatmeal, but with diced apple and cinnamon chips.)
L-Grilled Cheese, Pea Pods from the garden, Water
D-Fried Zucchini (garden), Spaghetti w/ homemade sauce

B-Cinnamon Scones, Yogurt, Juice
L-Cheesy Zukes & Rice, Pineapple, Water (Yeah, I’m totally making this concoction up.  That’s how I roll.)
D-Greek Turkey Burgers in Pitas w/ Cucumber Dill Dressing


B-Cinnamon Scones, Apples, Milk
L-Pita w/ Cheese Sandwiches (I used to get something like this at Miami Subs back in my college days… nostalgia!), Bananas, Zucchini Salad
D-Turkey & Cheese Paninis, Pasta Salad


B-Jelly Toast, Kiwi & Strawberries, Yogurt, Juice
L-Pasta Salad, Apples, Milk
D-Zucchini (garden) Bread, Hard Boiled Eggs, mixed fresh fruit


B-Smoothies, Fruit
L-Cheesy Beans & Rice, Water
D-Bacon & Mushroom Pizza (sure to delight my man)
B-Scrambled Eggs w/ Bacon, Toast
L-Beef Noodles, Apples Slices
D-Salsa Chicken Macaroni & Cheese, fresh corn 

As you can see, I definitely plan to make use of some of the “free produce” I’ve got going on right in my backyard.  I wonder if I’ll ever get over the sheer delight of going out with an empty bowl or basket and returning with one filled to the brim with fresh, home-grown goodness?  Do you think? :)

    Your bacon mushroom pizza sounds so good. I’ve been on a mushroom kick lately and can’t get enough of them! I see lots of zuchinnis, how fun to be able to eat out of your garden! Everything in my garden is still tiny, second year in a row for unseasonably cool summer temps here.

    • I always feel like my garden yield is so late compared to many, Katie. New England is another cool section of the country and it seems like people have these giant harvests and I’m just looking at itty bitty tomato flowers. ;) I LOVE mushrooms… so good!
