Chocolate Chip Waffles

I went years without making waffles- it’s true!  The hinges on my old iron bit the dust and it just wasn’t high on my list of things to replace.  A couple weeks ago, my husband surprised me with a new one (note: I am NOT one to freak out over an appliance gift- particularly if it’s one to use in the kitchen!) and that meant I could bust out an old favorite recipe for a weekend treat:

 

Chocolate Chip Waffles

 

  • 2 1/4 cups flour
  • 1 teaspoon baking soda
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1/4 cup butter
  • 1/4 cup brown sugar
  • 2 cups milk
  • 3 eggs, separated
  • 1/2 cup (or more, if you’re feeling indulgent) mini chocolate chips (mini chips work MUCH better for this recipe, but I have been known to substitute the regular size if it’s all I had)

 

1) Preheat waffle iron.

2) Combine dry ingredients (flour, baking soda, baking powder, salt) in medium bowl.

3) In separate bowl, beat egg whites until stiff peaks form.

4) In large mixing bowl, cream butter and brown sugar until fluffy.  Beat in egg yolks.  Alternately add flour mixture and milk.

5) Gently fold in egg whites and mini chocolate chips until no streaks remain.

6) Ladle batter onto preheated waffle iron and cook until golden and crisp.

7) Top with a dollop of whipped cream and fresh berries.

 

Yum!  While there IS chocolate in this recipe, the overall sugar content is really not too bad compared to other common breakfast treats.  What a fun way to start the day!
