Banana Walnut Oatmeal

As you must well know by now, I simply love “mixing it up” when it comes to my kids’ oatmeal.  And I hope you also realize that I post these recipes, not because I think you couldn’t figure it out on your own, but just to perhaps provide a springboard and nudge you to try something new!

Ingredients:  (makes 2 “adult” servings- this is what I make for my 3 kids)

 

  • 1 cup old fashioned oats (steel cut or quick are fine too, you’ll just need to adjust cooking time)
  • 2 cups water
  • 1 banana, thinly sliced (mine was actually frozen to start, which made it easy to slice but certainly isn’t necessary)
  • 2 tablespoons honey (banana is naturally sweet so, if you’re used to minimal sweetener, you could skip this… but my kiddos like it)
  • 1/2 cup chopped walnuts

 

Directions:

Add oatmeal and water to pan and bring to a low boil.  Immediately reduce heat to a simmer and add in banana and honey.  Cook for approximately 5 more minutes until desired consistency.  Stir in walnuts and serve!  (It looks a little prettier if you reserve a few nuts to sprinkle on the top, but it tastes the same if you skip that!)
